Pepperoni Pizza Dip

This dip is a favorite in any crowd!  I found it on TastyKitchen - it tastes just like pepperoni pizza. We went to a friend's Summer Pool party this weekend which was one of the most memorable days of summer - from riding the boat, swimming, drinking frozen drinks, to talking about 50 shades and bath salts!  It was a great time and a HUGE crowd, so I was impressed when this was the first dip that was scraped empty.


 I served it with bagel chips, pita chips, and tortilla chips!






You'll need:
1 package (8 oz) of cream cheese (softened!!)
3/4 cup of marinara sauce
1 cup parmesan (plus more for garnishment)
1 tablespoon of italian seasoning, divided
1 cup of mozzarella
1 package of pepperoni, chopped and divided 
Chips/Crackers for dipping



Step-by-step:
1.  Preheat oven to 375
2. Spread softened cream cheese onto bottom of 8x8 or 9x9 pan
3. Layer marinara sauce, parmesan, half the seasoning, and then the mozzarella cheese.  Sprinkle about half the pepperoni on top.
4.  Top the mozzarella with the rest of the italian seasoning. 
5. Add the rest of the pepperoni and sprinkle just a bit of parmesan cheese for garnishment!
6. Bake for 15-20 minutes, until the sides are bubbling!
7.  Place under the broil for 1 minute to get a crisp top (if desired)

Cinnapie

We love delivery from Papa John's.  My husband is obsessed with the Cinnapie, which I must admit is amazing!  I decided to try it out myself and we both realized homemade is WAY better than the delivery!


Plus it is really easy - which is my favorite :)




You'll need
Pizza Dough
1 tablespoon of melted butter
LOTS of cinnamon


Topping:
1/2 cup + 1/3 cup of flour
1/2 cup of white sugar
1/3 cup of brown sugar
2 tablespoons of shortening
2 tablespoons of oil (I used vegetable oil)


Icing:
1 1/2 cups of powdered sugar
3 tablespoons of milk
3/4 teaspoon of vanilla


You'll need to: 
1.  Roll out the pizza dough on a pan that has been sprayed with cooking spray.  Perforate pizza dough with the dough.
2. Brush melted butter over the pizza doug and completely cover the dough with cinnamon.  (If you like less cinnamon you don't have to go as crazy with it as I did below.
3.  Prepare the topping by mixing all the ingredients using a fork.   Sprinkle all over the cinnamon dough.
4.  Pop into the oven (460 degrees) for 10-12 minutes. 
5.  While pizza is cooking, make the icing.  Mix all the ingredients together.  If the icing is too thick, add extra milk. 
6.  When pizza is done, drizzle icing all over the pizza.
7.  Enjoy!

108 Calorie 'Ice-Cream' Sandwich

Some people are just genius.  Amanda at Not Just Cute came up with a way to spruce up using dessert topping (i.e. Cool Whip) and making it an 'ice-cream' sandwich.


Here's what you need:
Low Fat Pudding (any flavor, I used vanilla)
Package of Low Fat Dessert Topping
1 1/2 cups of skim milk
Low Fat Graham Crackers


You'll need to:
1. Pour pudding into cold skim milk.  Note this is only half the milk that is called for on the pudding recipe.
2. Beat until it starts to thicken.
3. Add in dessert topping (make sure this has time to thaw out, and is not just straight out of the freezer, you can leave it out 15 minutes)
4. Beat the dessert topping until smooth
5. Spread out the Graham crackers on a cookie sheet and add the filling
6. Pop into the freeze until hardened, than put the sandwiches into a tupperware with wax paper between each row!


What's best about Amanda's treat is that it is lowfat!!



Low Fat Pudding - 180 (entire package)
Lower Fat Cool Whip - 450 (entire 12 oz container)
Fat Free Milk - 130 calories
Lower Fat Graham Cracker - 70 (each sandwich)
20 servings/sandwiches
=108 calories EACH
