Oreo Stuffed Chocolate Chip Cookies




It’s been a while since I’ve posted! Not that I haven’t been cooking, we’ve just been busy with: Hubs birthday, Aggie Football, Travel for my job, and other miscellaneous stuff.

Anyway, here is another gem from pinterest.  If you are the type of person that likes to be healthy, or are trying to count calories, please look away.  Try this avocado salad instead (with yummy and healthy dressing!). This is not for the faint hearted... because this recipe is like eating 3 cookies in one.

I brought these to a tailgate and they were gone SO fast.  I mean like in less than an hour these giant/awesome/delicious cookies were gone.

You’ll Need
2 sticks of butter (room temp)
¾ cup packed brown sugar
1 cup white sugar
2 large eggs
1 tablespoon of vanilla extract
3 ½ cups of flour
1 teaspoon salt
1 teaspoon of baking soda
2 cups of chocolate chips
1 package of double stuff oreo cookies


Step-by-step:

1. In a large bowl, cream butter and sugars together until well combined and smooth.  Then beat in eggs and vanilla.


 2. Add salt, baking soda into the wet mix.  Slowly (in ½ cup increments) add the flour.  Beat with mixer.  Then,  slowly add in the chocolate chips until just combined.
 3. With a melon roller/cookie scoop, form small balls with the dough
 4. Place one cookie dough ball on each side of the Oreo cookie. Seal the edges together and gently press down (try not to crack the oreo!!)


 5. Place onto parchment or a baking mat and bake the cookies for 13-15 minutes at 350 degrees.

 6. Cool and Enjoy!

PS: These cookies go REALLY fast!  Save one for yourself because while your busy handing out the recipe, these will have already disappeared!! :)
