S'mores Bars!

I love s'mores.  And being at the end of November (oh my goodness, where has 2011
gone), what a perfect treat!

These are delicious like the original but portable too!!

You'll need
1 stick of butter (room temp)
1/4 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1 1/2 cup of all purpose flour
3/4 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
5 regular hershey bars OR  2 king size bars + 1 regular bar
One container of marshmallow creme (7 oz jar)

Step-by-step:
1. Preheat oven to 350°F. Grease an 8-inch square baking pan.

2. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla.

3.  Ten add the baking powder and salt.  In small increments (about half cups) add in the flour and graham cracker crumbs.  Mix at a slower speed until mixed well.

4. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. If possible, use just a bit less for the bottom layer than the top.

5. Place chocolate bars over dough breaking the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff.

6. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together like patchwork).  This can be tricky as if you don’t have enough then your marshmallow creme will show through.  It may be best to use a rolling pin (which I did not do, but will next time I make these).

7. Bake for about 30 until lightly browned. Cool completely before cutting into bars.

Peace, Love, Smores :)
