Gold Rush Bars

This delicious treat is one I randomly concocted in college.  The grocery store  had a bag of butterscotch chips for $1 (super clearance) I bought two bags without hesitating.


The first bag, I used to make an amazing trailmix recipe.  But the second bag, I thought for hours of what to make. And then it came to me!  I even came up with a clever little name for the bars based on their unique gold color, and we all know the best things come in gold (i.e. my handsome golden retriever Ben).


You'll need:
1 cup of butterscotch chips (I threw in a bit extra)
1/3 cup of peanut butter
1/2 teaspoon vanilla
2 cups of rice krispy cereal


Step by step:
1. Heat butterscotch chips, peanut butter, and vanilla on medium to low heat until smooth
2. Quickly add rice krispy cereal (1/2 cup at a time) until completely mix
3. Spread onto a pan (I use a small casserole pan)
4. Let cool and enjoy!


Tip: Make a double batch.. Trust me!

  3. Made these tonight and OMG they are yummy. I am going to have to make a double batch next time. I also tried them with Milk Chocolate chips and they were good too, but I liked the butterscotch ones best.
